Hot Cheesy Mushroom Spread

  1. Preheat oven to 350F(180C).
  2. In a frypan over medium heat, melt 1 tbsp butter.
  3. Add mushrooms and saute until soft.
  4. Remove from heat.
  5. Stir in cracker crumbs and mix well.
  6. Press mixture evenly into a 9" (23cm) springform pan.
  7. In same frypan, melt 1 tsp butter.
  8. Add green onions.
  9. Sauti until soft.
  10. Spread onions over crust.
  11. Sprinkle evenly with Monterey Jack and Cheddar cheeses.
  12. In a blender or food processor, process cottage cheese, eggs and cayenne until smooth
  13. Pour into crust.
  14. Sprinkle with paprika.
  15. Bake for 25-30 minutes.
  16. Remove from oven.
  17. Let stand 5-10 minutes before serving.
