Tofu-Citrus Veggie Bake
- 1 Tablespoon Coconut Oil
- 8 ounces, weight Extra Firm Tofu, Cut Into Cubes
- 1 whole Lime, Zest And Juice
- 1 whole Lemon, Zest And Juice
- 1 whole Orange, Zest And Juice
- 1 whole Carrot, Peeled, Cubed
- 1 whole Apple, Cored, Peeled, Cubed
- 1/4 cups Grated White Cheddar Cheese
- Preheat oven to 350 degrees F.
- In a saute pan over medium heat, add coconut oil and tofu cubes.
- Fry 45 minutes.
- Remove from heat.
- Transfer tofu to a bowl.
- Add critrus zests and juices, stir to mix.
- Add carrot and apple cubes, stir gently to mix.
- Transfer to an 8 x 8 nonstick baking dish.
- Sprinkle cheese evenly on top, cover with aluminum foil, and bake 2225 minutes.
- Serve and enjoy!
