Bean Thickened Soup

  1. Spray large saucepan with cooking spray; heat until hot.
  2. Saute carrot, onion and garlic until onion is tender, about 5 minutes.
  3. Stir in broth, tomatoes, and liquid, pureed beans and herbs.
  4. Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes.
  5. Season to taste with salt and pepper.
  6. Serve sprinkled with parsley.
