Bean Thickened Soup
- cooking spray
- 2 carrots, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 34 cups vegetable broth
- 1 (16 ounce) can whole tomatoes, coarsely chopped
- 1 (15 ounce) can great northern beans, drained and rinsed and pureed
- 12 teaspoon dried thyme
- 12 teaspoon dried sage
- salt and pepper
- chopped parsley (to garnish)
- Spray large saucepan with cooking spray; heat until hot.
- Saute carrot, onion and garlic until onion is tender, about 5 minutes.
- Stir in broth, tomatoes, and liquid, pureed beans and herbs.
- Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes.
- Season to taste with salt and pepper.
- Serve sprinkled with parsley.
