Skillet Peas with Red Onion and Mint
- 1 1/2 teaspoons vegetable oil such as olive oil, canola oil
- 3 tablespoons red onion finely chopped
- 1 clove garlic or to taste, minced or finely chopped
- 16 ounces peas, frozen or fresh, shelled, 1 pound
- 4 tablespoons stock chicken or vegetable
- 1 pinch sugar generous pinch
- 5 tablespoons mint leaves fresh, finely chopped
- 1/2 tablespoon butter
- 2 1/2 teaspoons lemon juice freshly squeezed
- 1 x salt and black pepper to taste
- Add the vegetable oil in a large nonstick skillet over medium-high heat until hot.
- Add the red onions, stirring often, cook until the onions are tender, 2 to 3 minutes.
- Stir in the garlic, and cook for about 40 seconds.
- Add the peas, pour the broth, and the sugar.
- Stir until well mixed.
- Cover and simmer until the peas are very green and heated through, about 4 minutes.
- Stir in mint and butter until well combined.
- Remove from the heat, and add the lemon juice.
- Adjust seasoning with salt and black pepper to taste.
- Serve and enjoy!
