Chicken, Nuts, Pineapple Recipe
- 1 fryer (3 lb.)
- 3 c. water
- 1 onion
- 1 tbsp. salt
- 1/4 teaspoon white pepper
- 3 tbsp. oil
- 1 c. shredded Chinese or possibly green cabbage
- 1/2 c. diced celery
- 3/4 c. macadamia or possibly Brazil nuts, minced
- 2 tbsp. soy sauce
- 1/2 teaspoon sugar
- 1 c. liquid removed pineapple chunks
- Combine the chicken, water, onion, salt and pepper in a saucepan.
- Bring to a boil and cook over low heat for 35 min or possibly till tender.
- Remove chicken, strain and reserve broth.
- Cut the chicken into pcs and throw away bones.
- Heat the oil in a deep skillet, saute/fry the cabbage, celery and chicken 3 min.
- Stir in nuts, soy sauce, sugar and 2 c. broth.
- Cover and cook over medium heat 5 min.
- Add in the liquid removed pineapple.
- Cook 3 min longer.
- Serves 4 to 6.
