Everything-Bagel Crusted Salmon
- Sauce
- Philadelphia Light Brick Cream Cheese Spread
- 3 cups half-and-half
- 1/4 cup chervil leaves
- 1/4 cup parsley flakes
- 1/4 cup dried tarragon leaves
- Crusted Salmon
- 1/4 cup sesame seed
- 1/4 cup poppy seed
- 1/4 cup dried minced onion
- 1/4 cup dried minced garlic
- 2 Tbsp. caraway seed
- 2 Tbsp. salt
- cooking spray
- 24 each skinless salmon fillets (4 oz.) Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1/2 cup fresh chives, finely chopped
- "Creamed" Cabbage Gratin
- Sauce: Microwave ingredients in microwaveable bowl on HIGH 1 min.
- or until cream cheese is melted and sauce is well blended, stirring as needed.
- Crusted Salmon: Combine first 6 ingredients.
- Rub 2-1/2 tsp.
- (12 mL) of the seasoning mixture onto top of each salmon fillet.
- Spray saute pan with cooking spray; heat on medium heat.
- Place fish fillets, seasoned-sides down, in pan; cook 2 min.
- or until seasoning mixture is lightly toasted.
- Turn fish; cook 3 min.
- or until fish flakes easily with fork.
- Reheat Sauce in microwave on HIGH 1 min.
- or until hot and bubbly, stirring as needed.
- For each serving: Mound 1/2 cup (125 mL) "Creamed" Cabbage Gratin onto center of serving plate; top with 1 Crusted Salmon fillet.
- Drizzle 1/4 cup (50 mL) sauce around salmon.
- Sprinkle with 1 tsp.
- (5 mL) chives.
