Tex-Mex Corn Dip
- 1 Tablespoon Butter
- 2 cups Corn Kernels
- 1/2 cups Mayonnaise
- 1/4 cups Sour Cream
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Chopped Cilantro
- 2 Tablespoons Grated Cotija Cheese
- 1 whole Tomato, Diced
- 1/2 teaspoons Cumin
- 1/4 teaspoons Chili Powder, Or To Taste
- Salt And Pepper, to taste
- Add the butter to a pan over medium heat.
- Once melted add the corn and saute until very lightly browned.
- Remove from the heat and allow to cool slightly while you make the dressing.
- Combine the mayonnaise, sour cream, lemon juice, cilantro, grated cheese, tomato, cumin and chili powder in a large bowl.
- Stir in the corn and season with salt and pepper.
