Baked Okra Etouffe
- 3 cups sliced okra
- 14 cup olive oil or 14 cup cooking oil
- 1 cup tomatoes, chopped (canned ok)
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 12 teaspoon cayenne (or to taste)
- 14 cup cracker crumbs or 14 cup crushed potato chips
- Spread okra in a greased casserole.
- Sprinkle a little of the olive oil on and mix with okra.
- Cover okra with tomatoes, onion, green pepper and seasonings.
- Cover loosely with foil.
- Bake at 400 degrees F for 1 hour, or until tender, stirring occasionally.
- Uncover; top with crumbs and brown lightly.
