Michele's Chili Con Carne Recipe
- 1 tbsp. grnd cumin
- 2-3 pound London broil, diced bite-size
- 1/4-1/2 pound diced bacon
- 3 yellow onions, peeled & minced
- 4 garlic cloves
- 1 green bell pepper, minced
- 4-6 jalapeno peppers, seeded & minced
- 4-6 tbsp. chili pwdr
- 2 cans (28 ounce.) stewed tomatoes
- Salt & pepper to taste
- 1 can (8 ounce.) tomato sauce
- Heat a large kettle and saute/fry the bacon till clear.
- Add in the diced meat and brown, over high heat along with the onions, garlic and peppers.
- When the meat is brown and the onions clear, add in the remaining ingredients.
- Simmer for several hrs and correct the seasoning.
- Serve in large bowls topped with Cheddar cheese, lowfat sour cream and/or possibly diced onions.
- Enjoy.
