Stargazer (Monkfish) and Vegetable Soup

  1. Thinly slice all the vegetables and chop fish into bite sized pieces.
  2. Season with salt and pepper.
  3. Melt butter in a pot and add the vegetables.
  4. Saute until slightly softened.
  5. Dust the fish with flour and add to the pot.
  6. Gently saute for a few minutes being careful not to break up the fish into smaller pieces.
  7. Add 2 1/2 cups of water and a stock cube.
  8. Cover with lid and simmer for about 15 minutes on medium-low heat.
  9. Adjust taste if needed.
  10. Finally, garnish with dried herbs before serving.
  11. Enjoy!
