How to Make Shredded White Leek

  1. Cut the white part of the Japanese leek into 5 cm long lengths.
  2. Cut slits into the leeks, then remove the green cores.
  3. Finely chop the white parts.
  4. Let rest in cold water for about 10 minutes.
  5. Drain well in a sieve.
  6. Done.
  7. Cut as-is, vertically.
  8. If you cut it diagonally, they'll become curly.
