Pecan Fruit Cake Recipe
- 1 pound candied cherries
- 1 pound candied pineapple
- 1 1/2 lbs. pitted dates
- 8 c. pecans, minced
- 2 c. sifted cake flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 4 Large eggs
- 1 c. sugar
- Cut fruit and nuts into small pcs.
- Cream sugar and Large eggs.
- Sift together flour, salt and baking pwdr.
- Add in flour mix to Large eggs and sugar and mix well.
- Pour batter over fruit and mix.
- Add in pecans to mix and mix well.
- Pour into greased tube pan.
- Preheat oven and cook at 275 degrees for 1 hour and 15 min.
