Mexican Tater Tot Casserole
- 1 pound Ground Beef
- 1/2 cups Chopped Onion
- 1 can (10 0z) Enchilada Sauce
- 1 can (2 0z) Chopped Green Chilis
- 1/2 teaspoons Garlic Powder
- 1 can (14 3/4 0z) Sweet Corn, Drained
- 1 bag ( 8 Oz) Mexican Style Shredded Cheese
- 1/2 bags (about 6 Oz) Frozen Tater Tots
- Preheat oven to 375 degrees F.
- Brown meat and onion over medium heat cook until the meat is browned and the onion is softened; drain grease.
- Mix in the sauce, chilies, and garlic powder.
- Heat through.
- Spread mixture into a 13x9-inch pan.
- Cover meat with corn, and cover corn with cheese.
- Place tater tots evenly over the casserole until it is completely covered.
- Bake 45 minutes or until tater tots are lightly browned and mixture is bubbly.
- Serve with sour cream and salsa, if desired.
