Zesty White Bean Spread for Sandwiches or Dip

• 15 ounces cannellini beans, rinsed
• 1 teaspoon lemon zest
• 1 teaspoon fresh thyme
• salt
• pepper
• 2 tablespoons olive oil

1. Blend all ingredients in food processor until smooth or to desired texture.

3. Spread on sandwiches or eat as a dip with vegetables or crackers.
