Our Family's Sweet Potato Croquettes
- 2 Sweet potatoes
- 100 grams Ground pork
- 1 tbsp Vegetable oil
- 1 pinch each Salt and pepper
- 1 Egg
- 1 Flour, panko
- 1 Oil for deep frying
- Peel the sweet potato.
- Chop in small pieces and soak in water.
- Drain water and put in heatproof container, then cover with plastic wrap to microwave until soft.
- Heat some vegetable oil in a frying pan.
- Stir-fry pork and season with salt and pepper.
- Mash the sweet potatoes while hot.
- Combine with pork and mix well.
- Form into flat patties.
- Coat thinly with katakuriko.
- Dredge in beaten eggs and coat with panko.
- Deep-fry until golden brown.
- They should be done as soon as they're browned on the outside since the inside is already cooked.
