Turkey-Melon Wraps
- 1/4 small cantaloupe
- four tortillas
- 1/4 c. horseradish sauce
- 6 large lettuce leaves
- 12 oz. turkey breast
- Cut rind from cantaloupe; cut flesh crosswise into 1/4-inch-thick slices (about 1 cup).
- Spread tortillas with an even layer of horseradish sauce; top with lettuce and turkey.
- Divide cantaloupe among tortillas.
- Tightly roll up tortillas, jelly-roll fashion.
- Trim ends, if you like.
- With serrated knife, cut wraps in half and serve.
