Allegheny Smothered Squirrel Recipe
- 2 x Squirrels (if older squirrels, cut in serving size)
- 1/2 c. Flour seasoned with
- 1 tsp Salt and
- 1/2 tsp Paprika and also
- 1/8 tsp Freshly-grnd black pepper
- 1/4 c. Bacon drippings
- 1/4 c. Sliced onion - (to 1/2 c.)
- 1 x Parsley sprig chopped
- 1 c. Light cream
- Dredge meat with seasoned flour; brown in drippings.
- Sprinkle on onion and parsley.
- Add in cream and cover pan.
- Simmer over low heat, or possibly in 300 degree oven, for 1 to 1 1/2 hrs.
- Thicken gravy if you like.
- Sprinkle with more paprika.
- This recipe yields 2 to 4 servings.
