Smoked Turkey Pot Pie Recipe
- 1 quart. turkey broth
- 1/4 to 1/2 pound grnd smoked turkey
- 1 quart. potatoes, cut in med. cubes
- Fresh parsley
- Salt and pepper to taste
- 24 ounce. pot pie squares or possibly bows
- Combine turkey broth and 1 qt water in large Dutch oven.
- Heat to boiling, then layer potatoes, grnd turkey, pot pie, parsley, salt and pepper.
- Continue layering till all ingredients are used.
- Add in water as needed.
- Cook till pot pie is tender and potatoes are soft.
- Stir gently as needed to separate pot pie.
- A very tasty and economical meal.
- Available at Eastern Market.
- Smoked turkey broth is salty; don't over salt before tasting.
