Grilled Red Potato Caesar Salad With Pancetta #SP5

  1. In 2 quart microwave-safe bowl combine Simply Potatoes and water.
  2. Cover; microwave on HIGH 5 minutes or until potatoes are fork tender.
  3. Drain water; place in large bowl.
  4. Pour over 1/2 cup salad dressing; stir to coat.
  5. Heat grill to high.
  6. Place potato wedges and lettuce, cut sides down, on grill rack coated with cooking spray.
  7. Cook until grill marks appear, about 2 minutes per side.
  8. Place lettuce on platter; drizzle with remaining salad dressing.
  9. Top with potatoes; sprinkle with Parmesan and pancetta.
