Italian Baked Lamb Chops

  1. Preheat oven to 350 degrees.
  2. In a good sized baking dish, drizzle 1 Tbs of the olive oil.
  3. On top of this, evenly layer the following- 1/3 of the sliced tomatoes, 1/3 of the sliced onions, 1/3 of the chopped garlic.
  4. Sprinkle with 1/3 of the Italian seasoning, salt, pepper, and Romano cheese.
  5. Lay lamb chops in a single layer.
  6. It is ok if they are snug, they will shrink as they bake.
  7. Drizzle with 1 Tbs of olive oil, and add another layer of 1/3 of the sliced tomatoes, 1/3 of the sliced onions, 1/3 of the chopped garlic.
  8. Sprinkle with 1/3 of the Italian seasoning, salt, pepper, and Romano cheese.
  9. Drizzle with the remaining olive oil and layer with the remaining tomatoes, onion, garlic, Italian seasoning, salt, pepper, and cheese.
  10. Bake at 350 for 40 minutes.
  11. Increase the temperature to 375 degrees, and drizzle the chops with 1/4 cup white wine.
  12. Return to oven, bake for 15 minutes.
  13. Serve with a spatula to make sure you get as much of the layers with each chop as possible.
  14. Enjoy!
