Potato BLT Wraps
- 6 slices apple-smoked bacon, cut in 1/2-inch pieces
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 8 large boston lettuce leaves
- 1 cup plum tomato, fresh diced
- 34 cup asiago caesar salad dressing
- In 12-inch nonstick skillet cook bacon over medium heat until crisp.
- Remove bacon to paper towels to drain.
- Pour off all but 1 tablespoon drippings.
- Add Simply Potatoes to skillet.
- Cover; cook 12 to 14 minutes, stirring occasionally, until simply Potatoes are tender and browned.
- Fill lettuce leaves with potatoes, tomatoes, and bacon; drizzle with dressing.
- Makes 8 wraps.
