Carne Asada-Style Pita
- Pico de Gallo
- 2-1/4 qt. tomatoes, seeded, diced
- 3 cups red onions, finely diced
- 1-1/2 cups fresh cilantro, finely chopped
- 6 Tbsp. lime juice
- 1/4 cup jalapeno peppers, seeds and membranes removed, minced
- 1-1/2 tsp. salt
- Seasoned Steak Strips
- 6 Tbsp. oil
- 1 Tbsp. ground cumin
- 2 Tbsp. chipotle chile pepper powder
- 6 qt. precooked beef sirloin steak strips Whole Foods 1 lb For $7.99 thru 02/09
- Finishing Touches
- 3 qt. yellow peppers, julienned Target 1 pkg For $2.99 thru 02/06
- 24 each pita bread rounds
- 3 cups Pure Kraft Refrigerated Barbecue Ranch Dressing
- 48 slices Kraft Jalapeno Monterey Jack Slices
- 18 each avocado, each cut into 8 slices Target 10 ea For $10.00 thru 02/06
- Pico de Gallo: Combine ingredients.
- Refrigerate until ready to use.
- Seasoned Steak Strips: Whisk oil, cumin and chili powder in large bowl until well blended.
- Add meat; toss to coat.
- Refrigerate until ready to use.
- For each serving: Cook 1 cup (250 mL) Seasoned Steak Strips and 1/2 cup peppers in small skillet on medium-high heat 3 to 5 min.
- or until meat mixture is heated through and peppers are crisp-tender, stirring frequently.
- Cut 1 pita in half; spread inside of each half with 1 Tbsp.
- (15 mL) dressing.
- Fill each half with 1 cheese slice, 3 avocado slices, 1/2 cup meat mixture and 1/4 cup (50 mL) Pico de Gallo.
