Frog-eye salad
- 1 cup a cini di pepe
- 16 oz mandarin oranges
- 20 oz crushed pineapples
- 20 oz pineapple tidbits
- 1 cup mini marshmallows
- 1 cup cool whip
- 3/4 cup sugar
- 1 tbsp all-purpose flour
- 1/2 tsp salt
- 2/3 cup pineapple juice
- 1 egg well beaten
- 1 tsp lemon juice
- Combine sugar, flour, salt, egg & pineapple juice in saucepan.
- Cook over medium heat, stirring constantly, till thickened.
- Remove from heat, add lemon juice, set aside to cool.
- Cook pasta, rinse with cold water.
- Combine pasta with sauce, cover and chill in fridge about 30 min.
- Stir in well drained fruit, marshmallows & cool whip.
- Chill 1 hour.
