Vegetable Pasta W/ Homemade Sauce
- 2 tbsp Vegetable oil
- 1 tbsp Butter
- 2 Squash
- 2 Zucchinis
- 1 Onion, finely chopped
- 1/2 Bell Pepper
- 1 1/2 cup Fresh Spinach (optional)
- 1 Tomato (diced and smashed)
- 1 can Tomato Paste
- 3 clove of Garlic
- 1/2 cup Milk or Cream Cheese
- 1 1/2 tbsp Basil
- 1 tbsp Italian Seasoning
- 1 tsp Oregano
- 1 tsp Rosemary
- 1 Salt and Pepper to Taste
- 1 Parmesan Cheese to Liking
- Saute onions, bell peppers, mushrooms, and garlic in one large pan until the onions become translucent.
- Cut squash and zucchini into long thin noodle like rectangles.
- Put onions, bell peppers, mushrooms, and garlic into a different sauce pan and place zucchini and squash into the first pan, keeping the juices in the original pan.
- Cook zucchini in the original sauces on low-medium temperature until they are al dente.
- Dice tomato into a mush and add into the second sauce pan along with tomato paste, milk, and all spices.
- Cook on low-medium.
- Put spinache on zucchini right before you're ready to serve so that it will wilt into the noodles.
- Top "noodles" with pasta sauce, and sprinkle Parmesan on top.
