Vegetable Pasta W/ Homemade Sauce

  1. Saute onions, bell peppers, mushrooms, and garlic in one large pan until the onions become translucent.
  2. Cut squash and zucchini into long thin noodle like rectangles.
  3. Put onions, bell peppers, mushrooms, and garlic into a different sauce pan and place zucchini and squash into the first pan, keeping the juices in the original pan.
  4. Cook zucchini in the original sauces on low-medium temperature until they are al dente.
  5. Dice tomato into a mush and add into the second sauce pan along with tomato paste, milk, and all spices.
  6. Cook on low-medium.
  7. Put spinache on zucchini right before you're ready to serve so that it will wilt into the noodles.
  8. Top "noodles" with pasta sauce, and sprinkle Parmesan on top.
  9. Enjoy!
