Gingered Peach Crisp
- 2 cans (28 oz/798 mL each) peach slices in light syrup, drained
- 1/2 cup firmly packed brown sugar, divided
- 1/4 cup pecan halves, toasted, finely chopped
- 1 Tbsp. lemon juice
- 1/4 tsp. each: ground cinnamon and ground ginger
- 1-1/2 cups bite-size shredded wheat cereal, crushed
- 1/4 cup non-hydrogenated margarine, melted
- Preheat oven to 350F.
- Combine peaches, 1/4 cup sugar, pecans, lemon juice and spices; spoon into 1.4-L casserole dish.
- Mix cereal, remaining 1/4 cup sugar and the margarine until blended; sprinkle over peach mixture.
- Bake 45 min.
