Old-Time Peppermint Cake

  1. Combine butter, sugar, eggs and vanilla in large mixer bowl.
  2. Beat on high speed 3 minutes.
  3. Combine flour, cocoa, baking soda, baking powder and salt; Blend just until combined; add candy.
  4. Pour into two greased and floured 9-inch layer pans.
  5. Bake at 350 for 30 to 35 minutes or until cake tester inserted in center comes out clean.
  6. Cool 10 minutes; remove from pans.
  7. Cool completely; frost.
  8. VARIATION.
  9. Chocolate Cupcakes; Omit peppermint.
  10. Fill 30 paper-lined muffin cups (2 1/2 inches in diameter) 2/3 full with bater.
  11. Bake at 350 for 20 to 25 minutes.
  12. frost as desired.
