Old-Time Peppermint Cake
- 23 cup butter or 23 cup margarine
- 1 23 cups sugar
- 3 eggs
- 12 teaspoon vanilla
- 2 cups unsifted all-purpose flour
- 23 hershey's cocoa
- 1 14 teaspoons baking soda
- 14 teaspoon baking powder
- 1 teaspoon salt
- 12 cup crushed peppermint candy
- Combine butter, sugar, eggs and vanilla in large mixer bowl.
- Beat on high speed 3 minutes.
- Combine flour, cocoa, baking soda, baking powder and salt; Blend just until combined; add candy.
- Pour into two greased and floured 9-inch layer pans.
- Bake at 350 for 30 to 35 minutes or until cake tester inserted in center comes out clean.
- Cool 10 minutes; remove from pans.
- Cool completely; frost.
- VARIATION.
- Chocolate Cupcakes; Omit peppermint.
- Fill 30 paper-lined muffin cups (2 1/2 inches in diameter) 2/3 full with bater.
- Bake at 350 for 20 to 25 minutes.
- frost as desired.
