Dolmas - Stuffed Green Peppers
- 1 12 lbs ground round
- 4 large green peppers
- 2 garlic cloves
- 1 small onion
- 12 teaspoon salt
- 12 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 (6 ounce) can tomato paste
- 1 (28 ounce) can crushed tomatoes
- 2 cups water
- Cut the tops off of the peppers and remove the seeds and pith.
- Crush and chop garlic, finely chop the onions.
- Place ground round in a mixing bowl.
- Add salt and pepper, garlic, onion tomato paste and oregano.
- With your hands, mix the meat well and stuff into the peppers packing the meat in firmly so there are no air pockets.
- In a large pot, place the stuffed peppers in the bottom and add the can of crushed tomatoes and water.
- You may need to add more water so that the peppers are nearly covered.
- Add some salt and pepper to the liquid to taste.
- Cook on low heat for about an hour or until the meat is fully cooked.
- Serve with plain yogurt (madzoon) on top.
