Perfect Pot Roast

  1. Sear roast in oil on all sides in a heavy dutch oven.
  2. Combine soy sauce and coffee and pour over meat after browning.
  3. Put half of sliced onions on the meat and the other half in the sauce around the roast; place bay leaves in sauce.
  4. Cover and bake 2 1/2 to 3 hours at 325 degrees.
