Apple Cinnamon Ball Cookies
- 1 cup Gluten Free Or Regular Rolled Oats
- 1/2 cups Oat Flour
- 1 teaspoon Ground Cinnamon
- 1 pinch Ground Nutmeg
- 1/2 cups Natural Salted Peanut Butter
- 1/4 cups Unsweetened Applesauce
- 13 cups Pure Maple Syrup
- 1 teaspoon Pure Vanilla Extract
- 2 drops Young Living Thieves Essential Oil (optional)
- 1/2 bags Cinnamon Chips, 10 Ounce Bag
- In a large bowl, whisk together the oats, oat flour, cinnamon and nutmeg.
- If you dont have oat flour you can substitute with white whole wheat flour (though it will not be gluten free then).
- Or you can make your own by placing 3/4 cups oats in a blender or food processor and blending until it resembles coarse flour.
- In a seperate bowl using a hand or stand mixer, mix together peanut butter, applesauce, maple syrup, vanilla and Thieves oil if using, until well combined.
- Pour the wet ingredients into the dry and mix until well blended.
- Then mix in the cinnamon chips if using.
- Scoop out about 1 tablespoon of dough and roll into a ball.
- Place on a parchment lined cookie sheet.
- Continue until all dough is rolled into balls.
- You can place them together as closely as you like because these are not going to be baked.
- Place cookie sheet in the fridge for about 1/2 an hour, just until cookies are firm.
- Dont be afraid to eat a few on the way to the fridge!
