Strawberry Buttercream Frosting
- 4 large egg whites room temp
- 1 1/4 cup sugar
- 3 stick butter, unsalted softened
- 1 1/2 cups strawberries pureed
- Put egg whites, and sugar in a bowl, and put over pot of simmering water.
- Whisk until sugar melts.
- Remove from heat, use mixer whisk for 5 minutes on medium Increase to med high, and whisk for 6 minutes.
- Reduce to medium and add small pieces of butter, mix until smooth.
- Add strawberry puree, and stir for 3 minutes.
- Frost cupcakes, or cake.
- Refridgerate.
