Mini Pistachio Craisin Cheese Balls
- 3/4 cups Finely Chopped Craisins Or Cherries, Divided
- 6 ounces, weight Plain Goat Cheese
- 2 ounces, weight Cream Cheese
- 1/2 cups Finely Chopped Pistachios
- Add 1/4 cup of the chopped craisins to the goat cheese and cream cheese and mix in just until incorporated.
- Combine the remaining Craisins and chopped pistachios in a shallow bowl.
- If pistachios arent already salted, add a large pinch of salt to the mixture to taste if desired.
- Divide cheese Craisin mixture into 16 evenly-sized balls.
- Or just dollop a little of the cheese mixture into the chopped pistachio/craisin mixture and roll each ball until well covered.
- Transfer to serving plate.
- Put a pick into the center of each ball, if desired.
- Refrigerate until ready to serve (up to 1 day).
