Fresh Berry Granita

  1. Puree berries and 1/4 cup water in food processor until smooth.
  2. Strain puree through fine mesh strainer.
  3. Discard seeds and solids, and set aside.
  4. In medium saucepan, bring sugar, 1/2 cup water, orange juice, mint and orange zest to a boil over high heat.
  5. Reduce heat to medium, and stir until sugar dissolves.
  6. Simmer 7 minutes, or until mixture is reduced to a syrup.
  7. Remove from heat, and discard mint.
  8. Stir syrup into berry puree.
  9. Pour into 8x8-inch pan or baking dish.
  10. Cover and freeze overnight.
  11. Using a fork, scrape granita into flakes.
  12. Garnish with mint and fresh berries, and serve.
