Jalapeno Pepper Pie
- 4 ounces jalapeno chiles
- 10 ounces sharp cheddar cheese, shredded
- 4 eggs, lightly beaten
- Pre-heat the oven to 325F
- Chop the chilies, and sprinkle them on the bottom of a 10" pie pan or quiche dish.
- Top with the cheese and pour over the beaten eggs.
- Bake for 30 minutes.
- Cool for about 15 minutes and then cut into 1" squares to serve.
