Stir Fried Beef With Sugar Peas
- 1 lb flank steak
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 tablespoons cornstarch
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 cups sugar snap peas
- 4 tablespoons oil
- 12 teaspoon salt
- 12 cup water chestnuts or 12 cup bamboo shoot
- 12 cup sliced mushrooms
- Cut beef, across the grain, into thin slices.
- (Meat is easier to slice when it is partly frozen).
- Marinate beef in mixture of soy sauce, oyster sauce, cornstarch, sesame oil and sugar.
- Set aside.
- Remove stems and strings from sugar peas, leaving pods intact.
- Rinse and pat dry with paper towels.
- Place 2 Tblsp.
- oil in a hot wok.
- Add salt, sugar peas, waterchestnuts and mushrooms.
- Cook, stirring constantly, until peas become a darker color green (about 2 min.).
- Remove from pan and set aside.
- In the same wok, add remaining 2 Tblsp.
- oil.
- Stir in beef mixture; cook for about 5 minutes, stirring constantly.
- Return sugar pea mixture to wok and mix thoroughly until hot.
- Serve with steamed rice.
