Green Chile Stew
- 1 cup white beans dried
- 1/2 pound ground turkey lean, or ground beef
- 1/2 pound beef, sirloin steak boneless, cubed
- 4 cups chicken broth
- 1/2 cup beer mexican (not dark)
- 2 pounds poblano peppers roasted, chopped
- 1 each tomatoes chopped
- 1 medium onions chopped
- 1 each garlic cloves minced
- 1/2 cup cilantro fresh, chopped
- 2 1/2 teaspoons red hot pepper sauce
- 1 1/2 teaspoons oregano
- 2 1/2 teaspoons cumin
- 18 cup parsley leaves chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- Soak and cook beans until tender.
- In a soup pot, saute ground meat and sirloin until done.
- Remove.
- Add onions, garlic and cilantro to pot and saute for 3 to 5 minutes or until onions are softened.
- Add chicken broth, beer, poblano peppers and tomato.
- Bring to a boil and reduce to a simmer.
- Add meat, beans, tabasco, oregano, cumin, parsley, salt and pepper.
- Stir well.
- Simmer for 2 hours, stirring occasionally
