Crunchy Dijon Baked Cod

  1. Combine cracker crumbs and 3 Tbsp.
  2. of the dill (or 1 Tbsp.
  3. of the dill for trial recipe); set aside.
  4. Mix mayo, mustard, lemon juice and remaining 3 Tbsp.
  5. dill (or remaining 1 Tbsp.
  6. dill for trial recipe).
  7. Place fish fillets in single layer on baking sheet sprayed with cooking spray.
  8. Brush tops and sides of fillets with mayo mixture.
  9. Spoon cracker mixture evenly over tops of fillets; press lightly into fillets.
  10. Bake at 450F for 15 min.
  11. or until crumb coating is golden brown and fish flakes easily with fork.
  12. Serve with the lemon wedges.
