Crunchy Dijon Baked Cod
- 2 cups crushed butter crackers
- 6 Tbsp. fresh dill, minced, divided
- 3/4 cup KRAFT MAYO Light Mayonnaise
- 3 Tbsp. GREY POUPON Classic Dijon Mustard
- 3 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 24 each skinless cod fillets (4 oz. each) King Sooper's 1 lb For $7.99 thru 02/09
- 3 each lemons, each cut into 8 wedges Safeway 4 ct For $5.00 thru 02/09
- Combine cracker crumbs and 3 Tbsp.
- of the dill (or 1 Tbsp.
- of the dill for trial recipe); set aside.
- Mix mayo, mustard, lemon juice and remaining 3 Tbsp.

- Place fish fillets in single layer on baking sheet sprayed with cooking spray.
- Brush tops and sides of fillets with mayo mixture.
- Spoon cracker mixture evenly over tops of fillets; press lightly into fillets.
- Bake at 450F for 15 min.
- or until crumb coating is golden brown and fish flakes easily with fork.
- Serve with the lemon wedges.
