Dijon Catfish W/Crunchy Honey Mustard Pretzel Crust

  1. Rinse fish with cold water, pat dry with papertowels.
  2. In small bowl, whisk together egg, mustard, milk, and pepper until smooth.
  3. Pour mixture into a shallow dish or pie pan.
  4. One at a time, lightly coat fish filets with flour, shaking off excess.
  5. Dip each in mustard mixture coating both sides.
  6. Dip each in pretzel crumbs to coat both sides.
  7. Pressing if necessary so the coating sticks to the fish.
  8. Set each on a small cookie sheet ready to fry.
  9. In large skillet, cook fish in hot oil over medium heat for 3-4 minutes per side or until golden and fish flakes easily with a fork.
