Dijon Catfish W/Crunchy Honey Mustard Pretzel Crust
- 4 (4 -6 ounce) catfish fillets, 1/2-inch thick
- 1 egg, beaten
- 3 tablespoons Dijon mustard or 3 tablespoons spicy brown mustard or 3 tablespoons honey mustard, also works well
- 1 tablespoon milk
- 14 teaspoon pepper
- 14 cup flour
- 1 cup coarsely crushed honey mustard pretzels
- 2 tablespoons vegetable oil, more if needed
- lemon slice (optional)
- Rinse fish with cold water, pat dry with papertowels.
- In small bowl, whisk together egg, mustard, milk, and pepper until smooth.
- Pour mixture into a shallow dish or pie pan.
- One at a time, lightly coat fish filets with flour, shaking off excess.
- Dip each in mustard mixture coating both sides.
- Dip each in pretzel crumbs to coat both sides.
- Pressing if necessary so the coating sticks to the fish.
- Set each on a small cookie sheet ready to fry.
- In large skillet, cook fish in hot oil over medium heat for 3-4 minutes per side or until golden and fish flakes easily with a fork.
