Satay Fish Bites
- 500g firm white fish fillets, roughly chopped King Sooper's 1 lb For $7.99 thru 02/09
- 1/4 cup finely chopped mint or coriander
- 1/4 cup KRAFT Smooth Peanut Butter
- 1 red onion, finely diced
- 1 stem lemongrass, finely sliced
- 1 tsp. finely chopped chilli
- 1 teaspoon minced garlic
- 1 teaspoon fish sauce
- flour, for rolling
- Dipping Sauce
- 1/4 cup fish sauce
- 1 tablespoon finely chopped Vietnamese mint or coriander
- 1 tablespoon brown sugar
- juice of 1 lime
- 1 teaspoon finely chopped chilli
- Place the first 8 ingredients into a food processor and blend until smooth.
- Shape tablespoons of mixture into balls or square shapes and roll in flour to coat.
- Chill for 15 minutes.
- Combine ingredients for dipping sauce ; chill.
- Shallow-fry fish bites over medium heat for 5 minutes or until golden brown and cooked through.
- Thread onto skewers or serve as individual bites with dipping sauce.
