Banana Corn Muffins
- 1 cup all-purpose flour
- 34 cup cornmeal
- 14 cup sugar
- 1 tablespoon baking powder
- 12 teaspoon salt (optional)
- 34 cup mashed banana
- 12 cup milk
- 12 cup vegetable oil
- 1 egg, slightly beaten
- Heat oven to 425.
- Line 12 muffins cups with paper baking cups or grease lightly.
- In medium bowl, combine flour, corn meal, sugar, baking powder and salt.
- In small bowl, combine banana, milk, oil and egg.
- Add to flour mixture, stirring just until moistened.
- Fill muffin cups 3/4 full.
- Bake 15 to 18 minute or until golden brown.
- remove from pan.
- Serve warm.
