Cottage Cheese Pancakes

  1. Separate eggs.
  2. Lightly beat the yolks.
  3. In a separate bowl, beat the egg whites until stiff, glossy peaks form.
  4. Stir together all ingredients except the egg whites.
  5. Whisk in one third of the egg whites.
  6. With a spatula, gently fold in the remaining egg whites.
  7. Grease a griddle or skillet with cooking spray or butter.
  8. Heat over medium-high heat until a drop of batter sizzles upon contract.
  9. Pour about 1/4 c per pancake onto the griddle/skillet.
  10. Cook until the surface bubbles and the edges are slightly dry (about 1 minute).
  11. Flip and cook until the underside is golden brown (about 3 more minutes).
