Cottage Cheese Pancakes
- 3 large eggs
- 1 cup cottage cheese
- 18 cup granulated sugar
- 13 cup all-purpose flour
- 12 teaspoon baking powder
- 14 teaspoon ground cinnamon
- Separate eggs.
- Lightly beat the yolks.
- In a separate bowl, beat the egg whites until stiff, glossy peaks form.
- Stir together all ingredients except the egg whites.
- Whisk in one third of the egg whites.
- With a spatula, gently fold in the remaining egg whites.
- Grease a griddle or skillet with cooking spray or butter.
- Heat over medium-high heat until a drop of batter sizzles upon contract.
- Pour about 1/4 c per pancake onto the griddle/skillet.
- Cook until the surface bubbles and the edges are slightly dry (about 1 minute).
- Flip and cook until the underside is golden brown (about 3 more minutes).
