Healthy Okara Sweet Potato
- 200 grams Sweet potato with skin on
- 50 grams Fresh okara
- 100 grams Plain yogurt
- 1 tbsp Honey
- 1 dash Egg yolk
- Rinse the sweet potato and slice.
- Cook for 5 minutes in the microwave.
- Once cool, peel the skin and finely chop.
- Combine the sweet potato, okara, yoghurt, and honey into a bowl.
- Mash the sweet potato with a wooden pestle or similar utensil.
- Put the mixture into aluminium cups, brush the tops with egg yolk.
- Bake for 10 minutes in a toaster oven.
