Healthy Okara Sweet Potato

  1. Rinse the sweet potato and slice.
  2. Cook for 5 minutes in the microwave.
  3. Once cool, peel the skin and finely chop.
  4. Combine the sweet potato, okara, yoghurt, and honey into a bowl.
  5. Mash the sweet potato with a wooden pestle or similar utensil.
  6. Put the mixture into aluminium cups, brush the tops with egg yolk.
  7. Bake for 10 minutes in a toaster oven.
