Chutney Salmon

  1. Preheat the oven to 350F.
  2. Line a baking sheet with aluminum foil.
  3. Lightly spray the foil with cooking spray.
  4. Place the fish with the skin side down on the baking sheet.
  5. Sprinkle the garlic powder over the fish.
  6. Spoon the chutney into a small bowl, cutting any large fruit pieces.
  7. Stir in the parsley and cumin.
  8. Spread over the top side of the fish.
  9. Bake for 20 minutes, or until the fish is cooked to the desired doneness.
  10. If you can find mango chutney with ginger, it is particularly good in this dish.
