Sweetheart Salad
- 2 c. crushed pineapple, undrained
- 1 pkg. Knox plain gelatine
- 1/2 c. sugar plus 1 Tbsp.
- 2 (8 oz.) cream cheese
- 2 Tbsp. cherry juice
- 1/4 c. cold water
- 2 Tbsp. lemon juice
- 1 large container Cool Whip or 2 small containers
- 1 small jar cherries, chopped
- Dissolve gelatine in cold water, set aside.
- Add pineapple and sugar together in pot on stove.
- Bring to a boil.
- Add the gelatine mixture to the pineapple mixture.
- Stir until gelatine is dissolved.
- Add lemon and cherry juice, let cool.
- Mash cream cheese and chopped cherries.
- Add to pineapple mixture.
- Chill to slightly thickened.
- Add Cool Whip.
- Top with chopped walnuts and cherries, if desired.
- Mix with mixer in large bowl.
