One Pot Burrito Bowls (From IHeartNapTime.com)

  1. In a large pan heat the olive oil over medium heat.
  2. Saute the onions and red peppers.
  3. Add in hamburger and cook until browned.
  4. Stir in salsa, black beans, corn, tomatoes, green chiles, jasmine rice, taco seasoning and chili powder.
  5. Pour in chicken stock and then bring to a light boil.
  6. Cover the pan and reduce heat to low.
  7. Cook for an additional 15-20 minutes, or until the rice is all the way cooked.
  8. When rice is done, S&P to taste.
  9. Top with your favorite toppings.
  10. We like to serve over lettuce in a salad bowl and eat with tortilla chips.
