Brie with Sundried Tomato Pesto

  1. Trim rind from top and sides of brie.
  2. Leave bottom rind intact.
  3. Put on a microwave safe plate.
  4. Drain oil from sundried tomatoes, but reserve oil and set aside.
  5. In a food processor, combine the remaining ingredients.
  6. Add about 1 tablespoon of the reserved oil and salt and pepper.
  7. Pulse until smooth.
  8. Add more oil if needed.
  9. Put pesto on top of brie and microwave on medium until soft and a little bit melted, at 15-second intervals.
  10. Serve warm with crackers.
