Brie with Sundried Tomato Pesto
- 1 pound Mini Brie Wheel Or Wedge
- 8 ounces, weight Sun-dried Tomatoes, In Oil
- 3 cloves Garlic
- 1 bunch Fresh Basil, Torn
- 1/4 cups Pignoli Nuts, Toasted
- Salt And Pepper, to taste
- Trim rind from top and sides of brie.
- Leave bottom rind intact.
- Put on a microwave safe plate.
- Drain oil from sundried tomatoes, but reserve oil and set aside.
- In a food processor, combine the remaining ingredients.
- Add about 1 tablespoon of the reserved oil and salt and pepper.
- Pulse until smooth.
- Add more oil if needed.
- Put pesto on top of brie and microwave on medium until soft and a little bit melted, at 15-second intervals.
- Serve warm with crackers.
