Southern Chili For Four
- 1 lb. ground beef
- 2 1/2 c. water
- 2 medium green peppers, diced
- 4 oz. onion, chopped
- 1/2 c. celery, diced
- 1 jalapeno pepper, diced
- 1/2 garlic clove, minced
- 3 medium tomatoes, chopped
- 1 c. tomato sauce
- 1 Tbsp. chili powder
- 1/2 tsp. black pepper
- 1/4 to 1/2 tsp. cayenne
- 1/8 tsp. cumin
- 2 cloves
- 1 bay leaf
- 1/2 tsp. salt
- In saucepan, combine beef and water; simmer about 15 minutes or until meat loses its red color.
- Separate meat from liquid and chill both.
- Remove any congealed fat.
- Set aside 3/4 cup of beef broth.
- In saucepan, combine peppers, onion, jalapeno, celery and garlic.
- Cook 5 minutes.
- Add tomatoes, tomato sauce, seasoning and reserved 3/4 cup of beef broth.
- Simmer 30 minutes.
- Serve.
