Salata Orientala

  1. Cook potatoes in their skins till done.
  2. Cool a little, then peel and slice in 1/8" slices and place in serving bowl.
  3. Add onion slices and green pepper rings.
  4. Season with salt and pepper.
  5. Whisk oil and vinegar together and pour over potatoes.
  6. Mix gently.
  7. Garnish with olives, tomatoes if desired.
  8. Serve chilled or at room temperature.
  9. Makes about 4 servings.
