Dutch Pea Soup Recipe

  1. Soak peas in 3 c. cool water for 12 hrs; drain; add in water to make 3 1/2 qts; add in salt and boil.
  2. Skim; add in pigs feet, leeks and celery, simmer 3-5 hrs till tender.
  3. Remove meat, throw away skin and bones.
  4. Return meat to soup.
  5. One half hour before serving, add in sliced sausage.
  6. Eat with toasted bread.
  7. Serves 8.
