Dutch Pea Soup Recipe
- 2 c. split green peas
- 3 1/2 quarts. water
- 1 1/2 teaspoon salt
- 2 pigs feet
- 1/2 pound smoked sausage
- 4 leeks, minced
- 1 1/2 c. celery, minced
- Soak peas in 3 c. cool water for 12 hrs; drain; add in water to make 3 1/2 qts; add in salt and boil.
- Skim; add in pigs feet, leeks and celery, simmer 3-5 hrs till tender.
- Remove meat, throw away skin and bones.
- Return meat to soup.
- One half hour before serving, add in sliced sausage.
- Eat with toasted bread.
- Serves 8.
