Banana Bread for Vegans
- 2 cups whole wheat flour (you can use any other kind)
- 1 teaspoon baking soda
- 12 cup vegan margarine (trans-fat free, or you can use oil too)
- 23 cup agave nectar (or 3/4 c. sugar)
- 2 tablespoons ground flax seeds (or any other vegan egg replacer for 2 large eggs)
- 2 tablespoons hot water
- 2 13 cups mashed almost black bananas (very ripe)
- 1 teaspoon cinnamon
- 1 teaspoon carob powder
- 14 cup chopped vegan chocolate (optional)
- Preheat oven 350F
- Grease a 9" pan.
- In a bowl, combine flour, soda, and the spices.
- In a separate cup, combine the flax seed with hot water and let sit about 1 minute.
- To the flour mixture, add softened or melted margarine and agave nectar.
- Stir.
- Add in mashed banana with the egg replacer/flax mix and blend well.
- When everything is blended, stir in the chocolate.
- Pour batter into the pan.
- Bake in preheated oven for 60-65 minutes or when the toothpick comes out clean.
- Cool bread for 10 minutes before serving.
