Blue Cheese And Brie Quesadillas With A Pear And Brown Su Recipe

  1. In a large saucepan, over medium heat, heat the butter.
  2. Stir in the sugar and cinnamon, stirring till the sugar dissolves.
  3. Add in the pears and salt.
  4. Mix well.
  5. Cook for 4 min, stirring occasionally.
  6. Dissolve the cornstarch in the water.
  7. Stir the cornstarch slurry into the pears and continue to cook for 2 min.
  8. Remove from the heat and cold completely.
  9. Place 1/2-oz of the blue cheese and 1/2-oz of the brie over half of each tortilla.
  10. Fold the tortillas over and press firmly.
  11. In a large saute/fry pan, over medium heat, add in 1 Tbsp.
  12. of the oil.
  13. Add in a third of the quesadillas and pan fry for a couple of min on each side till golden and the cheese is melted.
  14. Pan-fry the rest of the quesadillas in small batches.
  15. Fry the walnuts for 1 minute.
  16. Remove and sprinkle with cinnamon sugar mix.
  17. Drain on paper towels.
  18. Slice the quesadillas in half and serve with the pear compote and walnuts.
  19. Garnish with parsley.
  20. Yield: 8 servings
